The Austrian apple strudel is one of the most popular local specialties and also has a firm place in our kitchen. The secret of its success? A perfectly prepared strudel dough and a juicy, fruity filling. We are delighted to present our favorite recipe to you today.

The history of apple strudel:

Apple strudel has an exciting history and was even a welcome guest of Empress Maria Theresa. Originally from the Arab world, the strudel dough found its way to Vienna via Turkey and Hungary. The first known recipe was handwritten down in Vienna in 1696 and is still kept in the Vienna City Library today.

Our favorite recipe for Tyrolean apple strudel:

Ingredients:

Drawn strudel dough:

  • 250 g wheat flour
  • 125 g water
  • 1 tablespoon of oil
  • 1 pinch of salt

Filling:

  • 7 tart apples
  • 1 jar of organic applesauce
  • Raisins (to taste)
  • 2-3 tablespoons raw cane sugar
  • 2 teaspoons cinnamon
  • 1 splash of rum
  • 3 tablespoons breadcrumbs

Preparation:

Here we explain how we prepare a delicious apple strudel in the kitchen of our Bergland apartment house in Söll.

  • Strudel dough: Mix all the ingredients in a bowl with a dough hook to form a smooth dough, then knead vigorously by hand until the dough starts to bubble. Shape into a ball, brush with oil, cover and leave to rest for 30 minutes.
  • Prepare the filling: Preheat the oven to 200 °C. Slice the apples in half and cut the rest into pieces, mix with the raisins, apple sauce, sugar, rum and cinnamon. Add apple sauce for more creaminess and adjust with a little lemon juice and additional breadcrumbs if necessary.
  • Shape into a strudel: Roll out the dough thinly on a floured cloth and carefully stretch it out. Sprinkle the dough with breadcrumbs, apply the filling, fold in the edges and roll up using the cloth.
  • Bake: Place the strudel on a baking tray and bake for approx. 35 minutes.
