In keeping with this, we celebrate Pumpkin Day on 26 October – a perfect opportunity to introduce you to a hearty recipe for delicious pumpkin cream soup that no autumn kitchen should be without.

1. what makes the pumpkin so special?

The pumpkin, an autumn favorite not only because of its bright colors, is also a real health booster and is therefore often enjoyed as a pumpkin cream soup. Containing up to 90 percent water, pumpkin is extremely low in calories and has just 25 kilocalories per 100 grams. It is rich in important nutrients such as beta-carotene, which is not only known for its anti-inflammatory properties, but also strengthens the immune system and can reduce the risk of cardiovascular disease and eye problems. Fiber in pumpkin also ensures long-lasting satiety and aids digestion – ideal for a balanced diet.

2nd recipe: Cream of pumpkin soup – an autumn classic

Ingredients for the pumpkin cream soup:

for 4 guests:

  • 1 large onion and 2 cloves of garlic
  • 600 g pumpkin (e.g. Hokkaido or butternut)
  • 50 ml olive oil
  • 20 g butter
  • 100 ml white wine
  • 600 ml vegetable or chicken stock
  • ¼ tsp salt and 1 large pinch of pepper
  • 200 ml cream
  • 4 tbsp sour cream
  • 4 tsp pumpkin seed oil
  • A few roasted pumpkin seeds to garnish

Preparation of the pumpkin cream soup:

  • Preparation: Peel and finely dice the onion and garlic. Wash the pumpkin, halve, deseed and cut into 2 x 2 cm cubes.
  • Fry: Heat the olive oil and butter in a large pan. First fry half of the pumpkin cubes for about 3-4 minutes. Then add the onion and garlic and fry for a further 2-3 minutes. Deglaze with white wine and reduce almost completely.
  • Cook and puree: Add the remaining pumpkin cubes, pour in the stock and season with salt and pepper. Simmer for about 15 minutes until the pumpkin is soft. Pour in the cream and puree the soup with a hand blender until smooth.
  • Serve: Serve the soup in deep plates. Place a spoonful of sour cream in the middle of each plate and drizzle with pumpkin seed oil. Garnish with roasted pumpkin seeds.
