Today we would like to share a popular pastry recipe with you: Delicious strawberry curd cheese dumplings straight from the kitchen of our aparthotel in the heart of Söll am Wilden Kaiser. Perfect for the current season, when the popular strawberries are ripening and delighting us with their sweet taste. But before we go into more detail about our favorite recipe, we have put together some exciting details about the strawberry for you.

Strawberries – the most popular red fruit

Strawberries – the wonderfully sweet, bright red berries are probably one of the most popular early summer treats for young and old! But it’s not just the beautiful color and pretty shape of the strawberry that is so appealing! Strawberries are rightly considered a local superfood! They have a high vitamin B and C content and are rich in minerals and trace elements such as potassium, calcium, phosphorus, magnesium and iron. They also contain hardly any calories and are dehydrating – after all, they themselves consist of 90 percent water.

In botanical terms, the strawberry is not a berry at all, but a fruit of the rose family.

The magic power of lycopene

The substance that gives strawberries their beautiful red color is lycopene. Lycopene is a carotenoid and has an important function in our body as a free radical scavenger. A special property of lycopene is that its cell structure is broken up when heated and can then be more easily absorbed by the body.
No question! Most of us probably like strawberries best when they are freshly picked and eaten! However, the lycopene content of strawberries in processed form, such as strawberry jam, is higher. Curd cheese dumplings with strawberry compote

The strawberry compote

To make the deliciously aromatic strawberry compote, cut the strawberries into small pieces and boil with sugar and a little lemon juice. The amount of sugar depends on the natural sweetness of the red fruits and, of course, your personal preference. The compote tastes wonderful when served warm with the curd cheese dumplings. However, it can also be prepared earlier and enjoyed chilled!

Here is the recipe for fluffy curd cheese dumplings:

THE INGREDIENT LIST:

Depending on the desired size, the quantity given makes about 15 dumplings.

  • 170 g breadcrumbs
  • 20 g margarine or butter
  • 3 eggs
  • 500 g curd cheese
  • ¼ Vanilla pod
  • Lemon zest and lemon juice
  • 60 g sugar

THE PREPARATION:

  • Beat the eggs with the sugar and margarine/butter until frothy, then add the curd cheese and breadcrumbs. Now add a little vanilla and lemon and stir the mixture until smooth.
  • Now leave the dumpling mixture to rest for about 30-35 minutes at 4 degrees Celsius. Then shape into small dumplings.
  • Now cook the curd dumplings in lightly sweetened water over a low heat for about 15 minutes.
  • Carefully lift out the finished dumplings with a slotted spoon and toss in butter-browned breadcrumbs.
  • Serve with the strawberry compote.
  • The finishing touch – not just pleasing to the eye – all our sweet-tooths will also be delighted with a little powdered sugar on the dumplings. If you like, you can garnish the sweet dish with a mint leaf, fresh strawberries or a little chocolate decoration.
