Kaiserschmarren is a fluffy, torn pancake, generously dusted with powdered sugar and traditionally served with cranberries, apple sauce or stewed plums. It got its name from the famous Emperor Franz Joseph I, an avowed lover of this delicacy. Kaiserschmarren is deeply rooted in Tyrolean culinary tradition and is prepared with great enthusiasm by all Tyroleans.

A delicious coincidence
There are numerous anecdotes about the origins of Kaiserschmarren, but they all share a common protagonist: Emperor Franz Joseph I, known for his weakness for sweets (and of course for his Sissi).
Our favorite story tells of a day when the imperial chef actually wanted to prepare delicious pancakes. But on that day, the batter turned out too thick and tore when he turned it. Quick-witted, the chef cut up the failed pancake, dusted the pieces generously with powdered sugar and served them to the emperor. In response to the emperor’s astonished question, “What kind of pancake is that?”, the servant replied glibly, “Your Majesty, it’s Kaiserschmarren!”
This is how a mishap turned into one of Austria’s most famous desserts, which is still revered far beyond its borders today.
The best recipe for Tyrolean Kaiserschmarren
Your hosts, the Embacher family from Appartement Haus Bergland in Söll, are also ardent advocates of this authentic Tyrolean dish. Here we reveal Grandma Embacher’s Kaiserschmarren recipe so that you can enjoy the heavenly Kaiserschmarren at home:
1. ingredients for the Kaiserschmarren:
- 5 eggs
- 125 g flour
- 200 ml milk
- A touch of salt
- 30 g sugar and a packet of vanilla sugar
- Some butter for the pan
- Icing/powdered sugar for dusting
- Tart cranberries, apple sauce with a delicious hint of cinnamon or stewed plums (the autumnal version) to garnish
2. instructions for preparing the Kaiserschmarrens:
Separate the eggs and place the egg yolks in a large bowl. Also place the egg whites in a separate bowl.
Prepare the mixture: Add the milk, sugar, vanilla sugar and salt to the egg yolks and mix all the ingredients together well. Finally, add the flour and work into a smooth batter.
Beat the egg whites: Beat the egg whites with a pinch of salt until firm and then gently fold into the batter.
Fry the batter in a preheated, buttered pan until golden brown and turn the Kaiserschmarren over. Now reduce the heat by half, cover the pan with a lid and bake until the other side is also golden brown.
Cut the pancake into even pieces with a kitchen utensil and fry briefly.
